I’ve had a recipe for a while for rainbow cookies, but have yet to make them. I recently tried The Original Cakebites Classic Italian Rainbow cookies and I have to say that Reisman’s are much better to me. Cakebites seem doughy and Reisman’s have more of a cake texture. Delicious!!

I’ve also seen this called Italian Cookies.
I like these Rainbow Cookies, they have a light raspberry filling, instead of being overpowered with almond extract.
This is the closest to what we have in Baltimore.
